Hollow grind. As the name might already suggest the hollow grind is hollow. Traditionally speaking a hollow grind was applied by pushing the side of the blade to a large, spinning, grinding wheel. Because of the curve of the stone a hole would emerge which would stretch out over the entire length of the blade.

The hollow from the dry grinder reduced the amount of hand grinding needed. This is not needed with a Tormek. The electric motor provides all the power. Old habits die hard, especially if we already have several bench stones. We still have devoted followers of bench stones.

It is simple. Hollow grinding has almost always been used in very high-quality knives and razors because it is easier to sharpen! As one sharpens the blade and gets past the initial wider part of the blade, the blade will become easier to sharpen and will very slowly become more difficult as the hollow grind becomes thicker up the blade.

A hollow grind will self-jig the blade so that it is supported on the sharpening medium. A hollow grind automatically created a microbevel, which reduces the area to hone, making sharpening faster. Flat grinds are predominantly for those that (a) do not use a grinder at all, or (b) are intending to use a honing guide.

I prefer the 8"wheels (1750RPM). I got rid of the 6" grinder, as the 3550 RPM vibration was too annoying. For gouges, I have been grinding them on the side of the wheel, no hollow, and the 8" wheels have more space for that. Subsequently, I made a 6" diamond disc grinder (1750RPM) that I will now be using to grind gouges.
